GUACAMOLE !
This dish is GREAT for parties, your friends will be impressed...and its really E-Z to make! Get the following ingredients together ~

2 ripe avocados, cut in halves with the seeds removed
red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tabs cilantro or coriander leaves, finely chopped
1 tab of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped
Add the rest of the ingredients
and stir to mix. Garnish with
coriander leaves.

Guacamole should be eaten
immediately as it goes brown,
but if you can't, cover it with
plastic wrap, pushing as much
of the air out as possible.


Serve with tortilla chips.
Scoop out the avocado from the
peel and put it in a mixing bowl.

Using a fork, mash the avocado
until you like the consistency.
